Ingredients You Need

  • Ground Beef: We like using lean ground beef, such as an 85/15.
  • Potatoes: Russet or new potatoes, you can even use sweet potatoes.
  • Butter & Olive Oil: Butter for and olive oil together bring different flavors to the dish.
  • Yellow Onion: Sweet yellow onions, but you can also use red onions for a bit of a stronger onion flavor.
  • Green and Red Peppers: Any color will do, we like this combo.
  • Tomato Paste: Adds a deep, hearty flavor to the dish.
  • Worcestershire Sauce: Pairs well with the ground beef, enhancing a beefy flavor.
  • Soy Sauce: A depth of flavor, also adds a bit of saltiness.
  • Dried Oregano: Can also use Italian seasoning.
  • Paprika: We like sweet paprika but you can also use smoked paprika.
  • Kosher Salt and Black Pepper: Try to use fresh ground black pepper and kosher salt for best results.
  • Garlic Powder: If you don’t have garlic powder, you can also add fresh garlic, or both.
  • Beef Broth: Beef broth adds flavor, but also brings up the bits from the bottom of the skillet at the end of cooking.

How To Make It

We have easy to follow step by step photos to make ground beef and potatoes with instructions. For the complete directions, head down to the recipe card at the end of the post.

  • Cook Potatoes, Peppers & Onions: Add diced potatoes, peppers and onions to a large skillet with butter and olive oil. Cook for 7-8 minutes until the potatoes start to soften.
  • Season: Season the vegetables with garlic powder, dried oregano, paprika, salt and pepper. Stir in tomato paste and then add Worcestershire sauce and soy sauce. Push the vegetables to one side of the skillet.
  • Brown Ground Beef: Add the ground beef to the other side of the skillet and cook into crumbles until no pink remains.
  • Stir to Combine: Stir the ground beef into the vegetables until combined. Pour in beef broth to make a slight sauce and bring the flavors together. Taste for seasonings and adjust if needed.

Variations & Swap Outs

This ground beef and potatoes recipe is delicious and comforting as it is, but there are certainly ways to switch it up!

  • Swap out the protein: Try using ground turkey or ground chicken in place of the ground beef. For a vegetarian recipe, leave the meat out altogether.
  • Different vegetables: You can pretty much add any vegetable you like to this skillet dinner. Mushrooms, zucchini, corn, peas or fresh or canned diced tomatoes.
  • Spice it up: Use sriracha or any hot sauce you like to add some heat. Crushed red pepper flakes also works, or a pinch or two of cayenne pepper. Or try a drizzle of our Awesome Sauce or Bang Bang Sauce!

For Best Results

  • Use a Non-Stick Skillet: If you’re not a master yet with your stainless steel cookware, use a non-stick skillet so the potatoes don’t stick to the pan while cooking.
  • Make Sure It’s Big Enough: For this recipe, you’ll need at least a 13″ skillet for best results. If you don’t have a skillet that big, use two skillets to cook the vegetables and ground beef and then combine at the end.
  • Taste and Adjust Seasonings: Make sure that you taste and adjust the seasonings as you go. We usually add more salt and pepper to just about any dish at the end, right before serving.

Storing and Reheating

To store leftovers, place into an air tight container in the refrigerator for up to 4 days. Reheat right in the microwave for the easiest method, or add back into a skillet to crisp the potatoes back up.

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 pound potatoes, russet or new potatoes, cut into a small dice (we like skin on but you can peel if you like)
  • 1/2 cup diced yellow onion
  • 1/2 cup diced green pepper
  • 1/2 cup diced red pepper
  • 2 teaspoons dried oregano
  • 2 teaspoons sweet paprika
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 pound ground beef
  • 1/4 cup beef broth
  • 2 tablespoons fresh chopped parsley (optional)

Instructions

  1. Add the butter and olive oil to a large, 13″ skillet. Add diced potatoes, peppers and onions and cook for 7-8 minutes, stirring, until the potatoes start to soften.
  2. Season the vegetables with oregano, paprika, garlic powder, salt and pepper. Stir in the tomato paste and then add Worcestershire sauce and soy sauce. Push the vegetables to one side of the skillet to make room for the ground beef.
  3. Add the ground beef to the other side of the skillet and cook into crumbles until no pink remains. Drain any grease from the skillet. (After draining, I often season the beef with a little salt and black pepper)
  4. Stir the ground beef into the vegetables until combined. Pour in beef broth to make a slight sauce and bring the flavors together. Add chopped parsley if using. Taste for seasonings and adjust if needed.

Recipe Notes

Store: Store leftovers in an air tight container in the refrigerator for up to 4 days.

Reheating: Reheat leftovers in the microwave for the quickest method. Alternately, add back to a skillet with a pat of butter or a drizzle of olive oil to crisp the potatoes again.
