Grilled Zucchini and Squash

Delicious, Grilled Zucchini and Squash is an easy side dish that goes with every meal! All you need is a few ingredients and a hot grill or grill pan. We love grilled vegetables so much we do use a grill pan when we can’t get outside to grill. No grill or grill pan?? Season the sliced squash, place them on a baking sheet and roast them in the oven!

Super Easy Grilled Zucchini and Squash Recipe

We love making vegetable recipes like this Grilled Zucchini and Squash. So delicious, so easy to make and not to mention really affordable. Especially if you have a home garden and the squash is taking over! You can prepare, grill and serve these delicious veggies all in under 15 minutes.

The only ingredients we use are our All Purpose Seasoning and olive oil, besides, of course, the zucchini and squash. A sprinkle of salt and pepper is never a bad idea, there is salt in our all purpose seasoning but sometimes you need a touch more.

How To Make

Making this grilled zucchini and squash is as easy as slicing the squash into thick rounds and tossing with olive oil and the seasoning mix. That’s it. Of course you can add other spices as well, we’ll get into some variations further down in the post.

  • Slice and Season: Slice the squash into thick, 1/2″ slices and place into a bowl. Season with all purpose seasoning and olive oil and toss.
  • Grill: Place the seasoned squash on a medium heat grill for 3-4 minutes on each side. We’re looking for tender squash that isn’t mushy. Just fork tender.

Tips For Success

The first thing to keep in mind when grilling squash and zucchini is not to slice it too thin. We’re not looking for mushy squash here and if you slice it too thin that’s what you’re going to end up with.

A nice, thick, 1/2 inch slice is just about perfect for this recipe. You’ll get nice grill marks on the vegetables with a tender but still slightly firm texture.

Also make sure that the squash is well seasoned. Taste a piece when it comes off the grill and adjust the seasonings if needed. Add more all purpose seasoning and/or kosher salt and pepper if you wish.

Variations

There’s so many different ways to flavor grilled zucchini and squash, there’s really too many to list! Yellow squash and zucchini are both mild in taste, so you can flavor them up pretty much any way you like.

Besides or in addition to our all purpose seasoning, you can add cumin, garlic powder or paprika. Make an Italian twist and use oregano and basil, or even simply season with salt and pepper.

For an Asian flare, try a few splashes of soy sauce and toasted sesame oil or even a drizzle of sriracha for some heat.

What To Serve With Grilled Vegetables

If you’re not shoveling down these delicious veggies all on their own, I have to tell you, they go with just about any main course. We love making grilled vegetables when we’re already using the grill, but they’re so good we’ll still fire it up just to make this zucchini recipe!

Ingredients

  • 1 1/2 pounds zucchini
  • 1 1/2 pounds yellow squash
  • 1 tablespoon All Purpose Seasoning
  • 1 tablespoon olive oil

Instructions

  1. Preheat the grill to a medium heat, about 375-400 degrees. Alternately, you can make this recipe in a grill pan over medium heat.
  2. Slice the zucchini and squash into 1/2 inch thick slices and place into a bowl. Add the all purpose seasoning and olive oil and toss.
  3. Oil the grill grates or spray with a non-stick grill spray. Place the slices of squash on the grill for 3-4 minutes on each side until just tender.
  4. Remove the squash to a platter and serve immediately.

Recipe Notes

Store: Store leftover squash in the refrigerator for up to 4 days. The squash will get softer as it sits in the refrigerator but still delicious.

Reheat: You can enjoy this grilled squash cold or reheat it in the microwave for 30 seconds until warmed through.
