Greek Chicken Kabobs

These delicious Greek Chicken Kabobs bring the fun to dinner time! We marinate the chicken in our Greek chicken marinade, then add sweet red onion and tender zucchini. So easy to make, either on a grill or inside with a grill pan, so you can enjoy these kabobs any time of the year.

Why We Love These Greek Chicken Kabobs

Kabobs always seem to make dinner just a little bit more fun, right? Maybe it’s the look of them, or just having different meats and vegetables served all at once in individual portions. We start off by marinating chicken breast in our delicious Greek Chicken Marinade before adding to skewers. It’s lemony, herby, tangy and crazy delicious.

After marinating, this easy chicken dinner only takes minutes to prepare and grill. Have your vegetables prepped and ready to go and dinner can be on the table in about 15 minutes!

Ingredients For The Chicken Marinade

  • Olive Oil: Grab a good quality olive oil for the best flavor. Certainly not an expensive finishing oil, but one that has a nice flavor to it.
  • Fresh Lemon Juice: Fresh lemon juice will result in the best flavor.
  • Garlic: Fresh garlic will result in the best flavor.
  • Dried Oregano: Crush dried herbs a little with your hands before adding to recipes to release the flavor in the dried herbs.
  • Paprika: Regular, sweet paprika but if you like a smoky flavor you can also use smoked paprika.
  • Kosher Salt and Black Pepper

How To Make

You can assemble these chicken kabobs any way you like, this is the pattern we like best! See the recipe card at the end of the post for complete instructions.

  • Marinate: Marinate the chicken in the Greek chicken marinade for 4-8 hours. Remove the chicken from the marinade and discard the marinade.
  • Assemble: Assemble the chicken onto skewers with thick rounds of zucchini and wedges of red onion.
  • Grill: Grill for 3-4 minutes on each side until the vegetables are just tender and the chicken is cooked through.

Variations

There are many different ways that you can switch up the flavors in these Greek chicken kabobs! You can use different chicken marinades like our BEST Chicken Marinade or this tangy Italian Chicken Marinade. A family favorite marinade is this Asian Chicken Marinade that we use for literally everything. Even steak.

After switching up the marinades, you can switch up the vegetables to fit the flavor.

  • Mushrooms
  • Yellow squash
  • Yellow onion
  • Bell peppers
  • Eggplant
  • Whole cherry or grape tomatoes

Can The Marinade Be Used As A Basting Sauce?

Yes, it can be and there’s two ways to do it. The first way is to make a double batch of the marinade, use half to marinate the chicken and reserve the other half for a basting sauce.

Alternately, you can pour the used marinade into a saucepan and bring to a boil for at least 5 minutes to kill any bacteria present from the chicken. Then it’s safe to use to brush on the chicken kabobs when they are grilling.

Greek Chicken Kabobs

These delicious Greek Chicken Kabobs are super fun for parties or just every day dinners! Marinated in our delicious Greek chicken marinade and grilled to perfection!

Ingredients

  • Greek Chicken Marinade
  • 2 pounds boneless, skinless chicken breast
  • 2 medium zucchini, sliced into 1 inch thick rounds
  • 1 large red onion, cut into wedges
  • Wooden or metal skewers

Instructions

  1. Prepare the Greek chicken marinade. Pour into a large dish or a resealable bag and set aside. Cut the chicken into large, 2 inch cubes and place into the marinade. Toss to coat. Refrigerate for at least 4 hours or up to 8 hours.
  2. Remove the chicken from the marinade, discarding the marinade. (See note). Thread the chicken, zucchini and red onion in an alternating pattern (as show in the photos in the post) onto metal or wooden skewers. If using wooden skewers they need to be soaked in water for at least an hour before grilling.
  3. Grill the chicken kabobs for 3-4 minutes on each side over medium heat. (about 375-400 degrees) Remove the kabobs when the chicken is cooked through to 165 degrees, or white meat and juices

Recipe Notes

To use the marinade as a basting sauce: Make a double batch and reserve half for basting the kabobs on the grill. Alternately, you can boil the remaining marinade for at least 5 minutes and then use to baste the kabobs on the grill.
